Product obtained from the tenderest leaves of the escarole endive carefully selected and washed, seasoned with oil, garlic and a pinch of chilli. It is a very versatile product suitable for the most varied preparations from simple use as a side dish for meat and fish dishes, to the preparation of fillings, to fill pizzas or as a base for vegetable soups. Stir-fried with the addition of capers, olives and anchovies, it is the main element of the famous Neapolitan endive pizza.
