Paccheri is one of the Neapolitan pasta shapes par excellence. The name derives from the ancient Greek origins of the Neapolitan city, so it literally means a full hand, in the sense of a friendly pat. Just like its culinary intent, to be an amalgamation in dinners with friends, or family lunches, paccheri are suitable for any type of condiment. Good with all sauces.
Pasta di Gragnano is made using durum wheat of the highest quality, which has a high protein content. To be certified ‘Pasta di Gragnano‘, it has to contain at least 13% protein, whereas regular pasta normally has 11.5%. The dough must be extruded through rough bronze forms and, once it has taken shape, dried with a slow process (up to 60 hours).
