CARMIANO Spaghetti Chitarra IGP 500 g

This pasta shape takes the name SPAGHETTI CHITARRA from the tool which they were traditionally prepared, a rectangular wooden frame on which steel wires are inserted, which resemble the strings of a guitar. The dough stretched out in this frame acquires the shape of a thick spaghetti with a square section. Thanks to their rough and porous surface, they can accompany any sauce, from meat sauces, more full-bodied and substantial, to lighter fish ones, ideal in fact with seafood.

Pasta di Gragnano is made using durum wheat of the highest quality, which has a high protein content. To be certified ‘Pasta di Gragnano’, it has to contain at least 13% protein, whereas regular pasta normally has 11.5%. The dough must be extruded through rough bronze forms and, once it has taken shape, dried with a slow process (up to 60 hours).
