A soft wheat flour with high protein content obtained by mixing national and North American grains, which guarantee excellent stability and high water absorption, ideal for preparing doughs that require medium leavening. The dough obtained with this flour needs to rise from 8 to 16 hours, at a temperature of around 25°C.
