Healthy Aubergine Parmigiana

An absolute classic, made that little bit healthier by using a few clever tricks. It's high in protein, low in salt and simply delicious!

An absolute classic, made that little bit healthier by using a few clever tricks. It's high in protein, low in salt and simply delicious!

 2 Sliced aubergine
 Extra virgin olive oil
 1 Chopped onion
 3 Sliced garlic gloves
 2 Tins of chopped tomatoes
 2 Mozzarelle
 1 Bunch of basil
 75 g Grated parmesan

Heat the oven to 200 °C fan mode. Put the aubergine slices into baking paper lined trays and drizzle with a little oil. Roast in the oven for 30 minutes, flipping halfway until softened and crisping at the edges.

Meanwhile, heat the olive oil in a large pan and cook the onion and garlic for 10 minutes until soft, then add the chopped tomatoes, season, and simmer for 20 minutes.

In a roughly 20 cm x 30 cm baking dish, layer up the aubergine and sauce, and roughly half-way, a layer of half of the mozzarella, basil, and parmesan. Layer up the remaining aubergine and sauce, and finish with a final layer of mozzarella, basil and parmesan.

Put into the oven for 30 minutes or until golden and bubbling. Serve hot.
